Salt & Time

Ben Runkle and Bryan Butler opened Salt & Time in February 2013, creating Austin’s first Butcher Shop with a focus on local sourcing and whole animal butchery. The restaurant at Salt & Time grew organically over it’s first year to become a popular neighborhood joint and a destination for food lovers from throughout Texas and beyond. The menu features housemade charcuterie, dry aged steaks and a craveable burger named one of America’s Essential Burgers by Eater.com. Ben is a frequent participant in food events in Austin and beyond, with a special emphasis on events benefiting nonprofits such as Urban Roots, the March of Dimes and Farm Aid. Bryan was named the Best Butcher in Texas by the Texas Beef Council and is a founding member of the US Team at the World Butchers’ Challenge, competing in Ireland in 2018 and hosting and competing in Sacramento in 2020.
