Chef Gabe is the Executive Chef of Comedor Restaurant, one of Esquire's Best New Restaurants of 2019 and Austin Monthly's Restaurant of the Year. He is known for his progressive Mexican cuisine and use of timeless Mexican techniques and products, especially regional heirloom corn. He was crowned the "Prince of Pork" two years in a row by winning Cochon555 in both 2018-2019. He was also selected by Tribeza Magazine as 1 of 7 Austinites who helped define Austin in 2019.
